Lately, I’ve been mildly obsessed with throwing frozen chicken into the crock pot & seeing what happens. I also have a penchant for tacos. Last time, it was Buffalo Chicken Tacos. This time, I decided to keep it simple & classic.
Shredded Chicken Tacos
- Boneless skinless chicken breasts or tenderloins
- Packet of taco seasoning
- 1/2 c. chicken broth
Throw everything in crock pot. Let it sit there for 6-8 hour. When you’re ready to serve, drain & shred chicken. Serve with whatever toppings you prefer. I used: shredded Monterrey Jack, lettuce, black bean & corn salad, & a little mini nacho on the side.
